Turnip Greens: A Real Crop, Not a Kitchen-Scrap Trick
If you've read our radish, beet, or carrot regrowth guides, the honest verdict there is the same each time: greens yes, root never. Turnip is different, and worth its own guide because of it. Turnip greens aren't a scrap salvage, they're a real, sellable crop in their own right, and some varieties are bred to skip the root entirely. Here's what that actually changes about how you'd grow them, and what it costs the root if you don't.

Turnip Greens Are the Crop, Not a Consolation Prize
Every other guide in this family (radish, beet, carrot) tells the same story: stand a cut crown in water, get a few days of leafy greens, and never get a second root, because the growing point left with the part you cut off. Turnip breaks that pattern, and not because the plant is a different species. Per Clemson Cooperative Extension HGIC 1324 ("Turnips & Rutabagas"), some turnip varieties, named there as Alamo and Topper, are grown for foliage only and never produce a usable swollen root at all. Turnip greens are a real vegetable crop people plant and sell on purpose, not scraps rescued from the compost bin. That changes the question this guide answers: not "can I get something for free from a scrap," but "what does harvesting the greens cost the root, and is it worth choosing one over the other."
Why the Trick and the Real Crop Are Different Things
Clemson's HGIC 1324 states plainly that turnip leaves can be harvested from a very early stage for greens, and that continual harvest of the leaves adversely affects root development. That is a genuine tradeoff on a living, still-growing plant: every leaf you cut for the pot is growth the root doesn't get. The University of Minnesota Extension's turnip and rutabaga growing guidance makes the same point independently, and Clemson elsewhere on the same factsheet series notes that turnip greens are more commonly eaten than rutabaga greens, so this isn't a one-source quirk.
That is a structurally different mechanism from what happens with a severed radish, beet, or carrot crown. Those three regrow leaves from tissue that has already been cut away from any root, dead-end tissue with nothing left to lose or gain: the root it came from is finished either way. Turnip greens, cut from a plant still in the ground, come out of a living root's growing budget in real time. I could not find a turnip-specific source addressing what happens if you cut a turnip crown and stand it in a glass of water the way you would a radish or beet top, so I won't claim one: my own inference, not a cited fact, is that a severed turnip crown would behave the same dead-end way radish, beet, and carrot crowns do, because it's the same biennial root-storage structure with a single growing point that leaves with the root. What This Is and Isn't Worth
Worth doing: cutting turnip greens for the pot from plants you're growing anyway, especially early in the season while the root is still small, if you value the greens as much as (or more than) the root. Alamo and Topper specifically are bred to be grown for greens alone, per Clemson, so if greens are actually what you're after, growing a foliage variety from seed and harvesting continually beats trying to have both from a dual-purpose turnip.
Not worth doing: heavy, repeated leaf harvest from a dual-purpose turnip variety if a full-sized root is what you actually want at the end. Clemson's own warning is direct: continual leaf harvest adversely affects root development. You don't get a full turnip root and unlimited greens from the same plant; picking one constrains the other, and pretending otherwise is the mistake this guide exists to head off.

Can I harvest turnip greens and still get a full-sized root from the same plant?
Only partly. Per Clemson HGIC 1324, continual leaf harvest adversely affects root development, so heavy repeated cutting will cost you root size. A light early harvest of a few outer leaves, leaving the growing center intact, does less damage than routinely stripping the plant, but there's no published figure for exactly how much smaller the root ends up. If a full root is the priority, cut sparingly or not at all.
Are all turnip varieties good for growing as greens?
No, and this is the actual axis worth knowing: Clemson names Alamo and Topper specifically as varieties bred for foliage only, with no usable root produced. Most common turnip varieties are dual-purpose (root and greens both edible), but a dedicated greens variety will out-produce a dual-purpose one for leaf harvest, since it isn't holding anything back for a root.
Does cutting a turnip crown and standing it in water regrow anything, the way it does for radish or beet?

Per Clemson, turnip leaves can be harvested from a very early stage. There's no Clemson-stated cutoff date; treat "early and light" as the safer side of the tradeoff, not a guarantee of zero root impact.
